How does Tang Hulu make the candy shell?

Tang Hulu heats sugar syrup to the hard-crack stage: around 150 degrees Celsius. At that temperature the syrup stays fluid for only a few seconds after the skewer goes in, then sets to a thin, glass-clear shell as the skewer is lifted into cool air.
